OATS, HAZELNUT & CHOCOLATE VEGAN BISCUITS

This recipe is so easy and quick and these oats, hazelnut and chocolate biscuits are absolutely delicious and perfect for everyone.

INGREDIENTS:

  • 100g Flour ( I used spelt) 

  • 150g Oats

  • 70g Dark Muscovado Sugar

  • 60g Extra Virgin Olive Oil

  • 55g unsweetened Soya Milk

  • 30g hazelnuts (chopped)

  • 30g dark chocolate (chopped)

METHOD:

  • Mix together flour, oats, sugar 

  • Add the EVO oil and milk  and finally the hazelnuts and chocolate

  • Create 12/15 biscuits and bake at 170' for 20 minutes.

  • Enjoy!!

OATS AND ALMONDS VEGAN BISCUITS

Another quick and easy recipe, tried and tested. Another great one to do with kids.

INGREDIENTS:

  • 130g Organic Oats 

  • 90g Spelt flour

  • 40g wholewheat flour

  • 70g Dark Muscovado Sugar

  • 90g Extra Virgin Olive Oil

  • 3 tbsp unsweetened Soya Milk

  • 1 handful of Almonds

  • 1 tsp cream of tartar or baking powder (if using baking powder, omit bicarbonate)

  • 1 tsp bicarbonate of soda

  • a small tsp vanilla extract 

METHOD:

  • Put oats and almonds in a food processor and turn them into a flour

  • Mix together all the flours, sugar, cream of tartar, bicarbonate in a big bowl.

  • Now add the wet ingredients

  • Mix with your hands to form a rough dough

  • Place the bowl in the fridge to rest for at least 1h

  • Take the dough from the fridge and flatten it gently. Don't worry if the dough crumbles. Simply press it into shapes using a cooky mould

  • Place in the pre-heated oven at 180C for 15-18 minutes

  • Remove from the oven and enjoy!

3 INGREDIENTS OAT BISCUITS

It doesn't get any easier and healthier than this! A 3 ingredient simple and tasty recipe, ideal to get your little ones involved and to create a healthy, yummee snack or breakfast.

INGREDIENTS:

  • 100g Organic Oat

  • 2 Organic Bananas

  • 20-30g Dark Chocolate

METHOD:

Simply mash the bananas, mix with the oats and the grated dark chocolate. Spoon the mixture on oven paper, and cook at 180° for 20 mins. Ta Dah!

OATS AND YOGHURT SOFT BISCUITS

I am so pleased with this recipe as it is my very first OWN recipe.

It is very simple and the biscuits are crunchy and soft at the same time!

INGREDIENTS:

  • 200g Organic Oats 

  • 200g Almonds

  • 100g Dark Muscovado Sugar

  • 40g   Extra Virgin Olive Oil

  • 300g Natural Yoghurt (or soya yoghurt for the vegan version tbsp)

  • 2 tsp Baking Powder

 

METHOD:

  • Grind almonds in a food processor in little tiny bits.

  • Add the almonds to all the other ingredients and mix well

  • Using a spoon, place the mixture onto the oven paper 

  • Place in the  oven at 180C for 20 minutes

  • Remove from the oven and enjoy cool!

DARK CHOCOLATE AND BANANA FLAPJACKS

This is a super easy recipe I found on the internet. A great one to get the kids involved (without having a massive mess in the kitchen!)

INGREDIENTS:

  • 4 Bananas

  • 250 g Organic Oats 

  • 2 tbsp Maple Syrup

  • 2 tbsp Cocoa Powder

  • 50 g chopped Dark Chocolate

METHOD:

  • Pre-heat your oven to 180C

  • Mash the bananas in a large mixing bowl

  • Now add the 250g oats, 2 tbsp maple syrup, 2 tbsp cacao powder, 50g chopped dark chocolate and mix well.

  • Line a square baking tray with baking paper

  • Add the flapjack mix to the baking tray and press down with a fork (approx.1cm) depth), make sure to compress down firmly to hold them together

  • Place in the pre-heated oven at 180C for 15 minutes

  • Remove from the oven and allow to cool outside of the baking tray for 10 minutes before slicing into squares

2 INGREDIENTS PANCAKES

This is one of my favourite recipes, it is extra simple and quick.

It makes a great breakfast or a healthy snack  for the kids.

INGREDIENTS FOR EACH PANCAKE:

  • 40g Wholewheat or any other type of flour (spelt, buckwheat, rye or even plain if you prefer)

  • 80g Milk (I use unsweetened soya, but it works with any milk)

FOR THE TOPPING I used:

  • Hazelnut and Carob spread 

  • Raisins

METHOD:

Simply mix the flour with the milk. Warm up a frying pan with a tiny bit of EVO oil. Pour the mixture and cook for a couple or minutes, till firm. You do not need to flip the pancake over.

Add your chosen topping and enjoy!
